Evaluación in vitro del potencial probiótico de Lactobacillus acidophilus SS80 y Streptococcus thermophilus SS77

Resumen

El presente trabajo tuvo como objetivo evaluar in vitro las propiedades probióticas de las cepas de Lactobacillus acidophilus SS80 y Streptococcus thermophilus SS77 para uso animal. Las cepas fueron caracterizadas mediante pruebas bioquímicas, de hemólisis, de resistencia a diferentes pH, a concentraciones de sales biliares, y prueba de antagonismo microbiano frente a cinco patógenos de animales y autoagregación, coagregación e hidrofobicidad. Los resultados mostraron que ambas cepas producen peróxido de hidrógeno, lipasa y lecitinasa. S. thermophilus SS77 fue positivo a proteólisis de la caseína; sin embargo, las cepas no produjeron aminas biógenas desde los aminoácidos Lisina, Tirosina y Triptofano. Además, S. thermophilus SS77 utilizó la Alanina a partir de las 36 h, mientras que L. acidophilus SS80 usó Histidina a partir de las 72 h. Las dos cepas resultaron negativas a la prueba de hemólisis y difieren significativamente en los valores de pH alcanzados en leche descremada en polvo a partir de las 2 h. Crecieron a pH 6,5 y 5,5 y resistieron al jugo gástrico simulado por 3 h, con porcentajes de supervivencia por encima de 98 %. La cepa de L. acidophilus SS80 creció solo con 0,3 % de bilis (% p/v), mientras que S. thermophilus SS77 con 0,3 %, 0 % y 1 % (% p/v). Se produjo inhibición del crecimiento sobre todas las cepas patógenas evaluadas; resultó más efectiva Lactobacillus acidophilus SS80. Ambas cepas resultaron positivas a la prueba de autoagregación, coagregación e hidrofobicidad con valores superiores a 48 %. Se concluye que ambas cepas tienen potencial para ser utilizadas como aditivos probióticos en la alimentación animal.
